  • ground pork - 200 g

    200g ground pork (slightly fatty, not lean)

  • water chestnuts - 100 g

    100g canned water chestnuts (or chopped spinach/cabbage)

  • sea salt - 1 teaspoon

    1 teaspoon sea salt

  • sugar - 1 teaspoon

    1 teaspoon fine sugar

  • ground pepper - 0.5 teaspoon

    1/2 teaspoon ground black pepper

  • soy sauce - 2 teaspoons

    2 teaspoons light soy sauce

  • sesame oil - 2 teaspoons

    2 teaspoons sesame oil

  • shaoxing huatiao wine - 1 tablespoon

    1 tablespoon Shaoxing Huatiao wine

  • scallions - 2 tablespoons

    2 to 3 tablespoons of chopped scallions (spring onions)

  • dumpling wrappers - 25

    25 to 30 store bought dumpling wrappers (the round kind, not the square wanton or spring roll wrappers)

  • flour to dust - 24 servings

    Plain flour to dust

  • vegetable oil - 4 tablespoons

    4 to 6 tablespoons vegetable oil (for 2 batches of cooking)

  • water - 0.6666667 cups

    2/3 cups water (for 2 batches of cooking)
